This salad has sooo much yummy stuff in it, and I find it the perfect lunch during the workday!
Here's the great thing about this salad [and most salads that I make]: you make it your own! No rules, just healthy mix-ins. I'm listing my ingredients below but any one of them can be substituted, omitted or added to make the salad just right for you.
Ingredients for the salad:
shredded white cabbage
chopped romaine lettuce
boxed super greens (spinach, kale, chard)
orange cherry tomatoes
sliced mini cucumbers
chickpeas (drained and rinsed from the can)
roasted and salted sunflower seeds
black sesame seeds
Ingredients for the dressing:
toasted sesame oil (less than the avocado oil)
apple cider vinegar (less than the white vinegar)
Mix together all the salad ingredients in a bowl.
Add the dressing, to taste
