'Lots of stuff in it' Salad!

This salad has sooo much yummy stuff in it, and I find it the perfect lunch during the workday!

Here's the great thing about this salad [and most salads that I make]: you make it your own! No rules, just healthy mix-ins. I'm listing my ingredients below but any one of them can be substituted, omitted or added to make the salad just right for you.

Ingredients for the salad:

  • shredded white cabbage

  • shredded carrots

  • chopped romaine lettuce

  • boxed super greens (spinach, kale, chard)

  • microgreens

  • chopped parsley

  • chopped mint

  • orange cherry tomatoes

  • sliced mini cucumbers

  • chickpeas (drained and rinsed from the can)

  • roasted and salted sunflower seeds

  • black sesame seeds

  • hempseeds

Ingredients for the dressing:

  • avocado oil

  • toasted sesame oil (less than the avocado oil)

  • white vinegar

  • apple cider vinegar (less than the white vinegar)


  1. Mix together all the salad ingredients in a bowl.

  2. Add the dressing, to taste

  3. Mmm.. enjoy
