Today is day 14 of my 28-day Elimination Diet. I really haven't been missing much since there are so many wonderful whole foods. Hey, I even added corn and peanuts to my list of foods to remove! I look forward to reintroducing foods (like feta cheese!) in just a couple of weeks-- but for now, it really isn't tough. This was my lunch today while on the diet: grilled chicken, basmati rice, zucchini, mushrooms, and a Mediterranean salad with fresh mint, lemon and extra virgin olive oil. Do-able, right?
