Celery in my salad!

I put together this salad for work after deciding that I needed to consume more celery. I was pleasantly surprised - give it a try and let me know what you think😃 I used a food processor to shred the veggies but you can just thinly slice with a knife if you don't have a food processor.

Ingredients - Salad:

  • 1/2 head of white cabbage, shredded

  • 2 large carrots, peeled and shredded

  • 2-3 celery stalks, chopped

  • 2 cups baby spinach, chopped

  • 1/2 cup basil, finely chopped

Ingredients - Dressing:

  • 1 Tablespoon black sesame seeds

  • Ume Plum Vinegar, drizzle to taste- optional

  • Apple cider vinegar, drizzle to taste

  • Avocado oil, drizzle to taste

  • 1/4 tsp Himalayan salt


Mix the dressing ingredients into a large bowl with the salad ingredients. Taste and add more vinegar, salt or oil to taste. Mmm... enjoy!

Hint: Only mix dressing in salad you'll be enjoying then. It's best to bottle dressing for later portions. I like to do about half vinegar to half oil, with a little more vinegar to oil.
