Avocado Boats

I love this salad in an avocado boat, and I hope you do, too!


  • 2 avocados: save the shell for the "boat". Halve each avocado, remove pit, slice avocado width and length wise being careful not to cut into the avocado shell. Scoop chunks with a spoon and add to large bowl with other ingredients and set aside the shell to use as a boat/bowl

  • 1/2 long English cucumber (or 1 large cucumber), diced

  • 5 Compari tomatoes (or 3 vine ripe tomatoes), diced

  • 3 radishes, sliced and diced

  • 1/2 bell pepper, diced used 1/4 green and 1/4 red since I had that in the fridge)

  • 1/4 red onion, diced

  • 2 cups lettuce, finely chopped or shredded

  • 2 cups cilantro leaves, finely chopped

  • 2 limes, juiced

  • 1/2 tsp sea or Himalayan salt

  • 1 jalapeno, seeds removed and finely diced


Gently mix everything in the bowl and scoop into avocado shell. Serve and enjoy your avocado boat! Oh, and refill right into the boat for the next helpings- just one will not be enough! 😉
