It's the first time I've made this salad and I enjoyed it so much that I wanted to share it with you! It's summertime now so strawberries are juicy and add to the deliciousness big time.
5 oz Arugula (the entire carton)
1/2 seedless cucumber, cut into half moons
8-10 strawberries, stems removed and thinly sliced
3 sprigs of fresh thyme, use the tiny leaves and discard stems (if you run your fingers along the stem, the leaves pop off)
1/4 cup of olive oil or to taste, later for the dressing
1/2 cup unsalted, roasted pumpkin seeds (you can use raw too)
sea salt or Himalayan salt, 1/4 tsp
Salad: Empty arugula into a large salad bowl, add the cucumber and strawberries.
Dressing: in a small bowl, squeeze the lemon (I just use a manual citrus juicer), add fresh thyme and salt. Add oil, using more or less for preference. Stir all together.
Mix dressing into salad and sprinkle pumpkin seeds on top of salad.
